I love the fall in Utah. All the fruit and vegetables ripe at the same time. My grapes and apples are ripe. The peaches are ready to turn into jam. The pears are perfect...
Last spring I planted a bunch of tomatoes and peppers. Now all of my jars are full of salsa and I have to dump out old food to make room for the grape juice before the first frost.
The aroma in the house in the fall is wonderful. If it isn't the salsa cooking, it is grapes!
3 years ago I have started canning again. I was not teaching a regular classroom and I had time, fruit, and vegetables on my hands. This year I have the fruit and vegetables but very little time.
I have about 5 more batches of grapes to pick and steam and about 2 more times to gather tomatoes. I do not have time to dry the apples, so they are dropping to the ground only to be consumed by Gus.
I am always grateful for the food that I do get to put away. Drinking grape juice while watching the snow pile up is a reminder that summer will come again!
